Spiced Tomato Rice

A fragrant and delicious rice dish infused with rich tomato flavors and aromatic spices.

Ingredients

  • 2 cups Gold Valley Basmati Rice, rinsed and soaked for 20 minutes
  • 3 tbsp Gold Valley Sunflower Oil
  • 2 tbsp Gold Valley Tomato Paste
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp Gold Valley Cumin Powder
  • 1 tsp Gold Valley Coriander Powder
  • ½ tsp Gold Valley Turmeric Powder
  • ½ tsp Gold Valley Chili Powder (adjust to taste)
  • 1 bay leaf
  • 3 cups vegetable or chicken broth
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat Gold Valley Sunflower Oil in a deep pan over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add Gold Valley Tomato Paste and cook for 2–3 minutes, stirring continuously.
  5. Mix in Gold Valley Spices (cumin, coriander, turmeric, chili powder) and cook for another minute.
  6. Drain the soaked Gold Valley Basmati Rice and add it to the pan, stirring well to coat the grains with the spiced tomato mixture.
  7. Pour in the broth, add a bay leaf, and bring to a boil.
  8. Reduce the heat, cover, and simmer for 15 minutes or until the rice is cooked and fluffy.
  9. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and garnish with fresh coriander leaves.
  10. Serve warm with yogurt, grilled chicken, or a fresh salad.
