Ingredients
- 2 cups Gold Valley Basmati Rice, rinsed and soaked for 20 minutes
- 3 tbsp Gold Valley Sunflower Oil
- 2 tbsp Gold Valley Tomato Paste
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp Gold Valley Cumin Powder
- 1 tsp Gold Valley Coriander Powder
- ½ tsp Gold Valley Turmeric Powder
- ½ tsp Gold Valley Chili Powder (adjust to taste)
- 1 bay leaf
- 3 cups vegetable or chicken broth
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat Gold Valley Sunflower Oil in a deep pan over medium heat.
- Add chopped onions and sauté until golden brown.
- Stir in garlic and cook for another minute until fragrant.
- Add Gold Valley Tomato Paste and cook for 2–3 minutes, stirring continuously.
- Mix in Gold Valley Spices (cumin, coriander, turmeric, chili powder) and cook for another minute.
- Drain the soaked Gold Valley Basmati Rice and add it to the pan, stirring well to coat the grains with the spiced tomato mixture.
- Pour in the broth, add a bay leaf, and bring to a boil.
- Reduce the heat, cover, and simmer for 15 minutes or until the rice is cooked and fluffy.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and garnish with fresh coriander leaves.
- Serve warm with yogurt, grilled chicken, or a fresh salad.
